INGREDIENTS.

THE METHOD.

RINSE THE SPROUTS

Rinse gently and remove any dark or damaged beans. The thin roots may be left on for an everyday version.

BOIL THE BROTH

Bring the stock to a boil with garlic and soup soy sauce.

COOK WITHOUT PEEKING

Add the sprouts and cover. Boil for 4 minutes without lifting the lid, which helps avoid a raw bean smell.

SEASON LIGHTLY

Open the lid, add scallion and optional chili, then adjust with a small amount of salt.
