KOREAN FOOD · FROM HEAT TO FINISH
21 / 22

01 · THE DESTINATION
Manila clams open into a clear, briny broth around thick knife-cut noodles. Barley rice and fresh geotjeori make the table feel complete.

02 · BEFORE THE BOIL
Soak live clams in salted water, rinse thoroughly, and prepare anchovy-kelp stock, fresh noodles, zucchini, scallions, garlic, and kimchi.

03 · FIRST OPEN
Simmer clams only until they open, removing finished ones if necessary. Add vegetables and noodles after the broth has taken on their flavor.

04 · LIFT THE NOODLES
Shake excess flour from kalguksu and loosen strands as they enter the pot. Return clams near the end so they stay tender.

05 · READY TO SHARE
Ladle all three into each bowl. Fresh geotjeori provides heat and crunch; a spoon of barley rice can come before or beside the noodles.

06 · REGIONAL BOWLS
White-clam kalguksu offers an especially clean regional broth, while haemul kalguksu adds squid, shrimp, and small octopus.

07 · THE LAST BROTH
When broth remains, add a little rice and scallion for a soft finish without overwhelming the clam flavor.
