Gopchang Gui: Grilled Beef Intestines — A Deeper Step Into Korean Food

Gopchang Gui: Grilled Beef Intestines

Gopchang is rarely a visitor's first Korean meal. If a Korean friend suggests it, you have probably already explored plenty of Korean food—or learned to enjoy soju. The idea of eating intestines can be the hardest part; many diners understand the appeal only after tasting a hot, well-browned piece.

Gopchang Gui: Grilled Beef Intestines — Start With Modeum Gopchang

Start With Modeum Gopchang

Most specialist restaurants sell modeum gopchang, a mixed platter that lets the table compare several cuts. Gopchang has the best balance of nutty interior and chew; daechang is the richest and fattiest; makchang has less filling and a firmer chew.

Gopchang Gui: Grilled Beef Intestines — Usually Pre-Grilled for Speed

Usually Pre-Grilled for Speed

Many restaurants partially grill the intestines before bringing them out. At the table they may need only about three to five more minutes, rather than a full cook from raw. Follow the staff's cue because timing and cuts vary by restaurant.

Buchu often arrives with the platter or is laid around the edge of the grill. It softens in the rendered fat and makes a fresh, savory partner for the richer pieces.

Taste Each Cut While Hot

Try one piece of each cut before deciding which to order again. Gopchang gives nutty richness and chew, daechang delivers a soft rush of fat, and makchang rewards diners who prefer a firmer bite.

Gopchang Gui: Grilled Beef Intestines — House Sauce, Salt, or Soybean Powder

House Sauce, Salt, or Soybean Powder

Gopchang restaurants commonly offer two or three dips. A house soy-based sauce with a little dadaegi is common; salt is more typical than a heavy gochujang dip, and some restaurants also serve roasted soybean powder.

Gopchang Gui: Grilled Beef Intestines — Cold Noodles or Rice and Jjigae

Cold Noodles or Rice and Jjigae

When only a few grilled pieces remain, finish with naengmyeon or order rice with a small doenjang-jjigae or sundubu-jjigae. Fried rice is more reliably associated with gopchang-jeongol; not every grilled-gopchang restaurant offers it.

A SIMPLE
HOME-STYLE RECIPE.

2 servingsPrep 15 minCook 20 min

INGREDIENTS

Pan-Grilled Gopchang

INGREDIENTS

  • Professionally cleaned beef gopchang 500 g
  • Potato 200 g
  • Onion 150 g
  • Garlic 50 g
  • Chives 100 g
  • Sesame oil 20 ml
  • Salt 3 g
  • Black pepper 1 g
  • Pickled onion 120 g

COOKING METHOD

  1. 01

Use only professionally cleaned, ready-to-cook gopchang. Pat dry and cut very long pieces in half.

  2. 02

Begin in a dry pan over medium heat so the interior cooks as the fat slowly renders.

  3. 03

Turn after the first side is golden. Add potato, onion, and garlic to the rendered fat.

  4. 04

Cut firm pieces into bites, brown every cut side, and add chives at the end. Cook thoroughly before serving.

HOME NOTEA splatter screen helps; rendered fat can flare over an open flame.
