  • Soy sauce 90ml
  • Water 90ml
  • Pear or apple purée 100g
  • Sugar 45g
  • Mirin 30ml
  • Minced garlic 25g
  • Sesame oil 15ml
  • Black pepper 1g
  • Sliced scallion 30g

METHOD

    Rinse away bone fragments, drain, and pat the ribs dry.

    Combine soy sauce, water, fruit purée, sugar, mirin, garlic, sesame oil, pepper, and scallion.

    Marinate the ribs in the refrigerator for 4–12 hours, turning once.

    Shake off excess marinade and grill or pan-sear over medium-high heat for 3–4 minutes per side, until browned and safely cooked.
